“I think the hospitality industry owes a lot to Paul Aron,” says designer and zero-waste advocate Joost Bakker. “He’s quietly driven industry-changing ideas from behind the scenes and is rarely given the credit he deserves.” Bakker speaks from experience. In 2010, Aron helped him establish a permanent home in Perth for Greenhouse: Bakker’s bold, green-thinking pop-up that proved feeding the world didn’t have to cost the Earth.


Not that Greenhouse is the only ground-breaking venue Aron has helped shape. Perth also has him to thank for Mexican cantina El Publico, the red-sauce hotspot ACE Pizza and, of course, Mary Street Bakery. Aron’s influence has also shaped Australia’s drinks culture: his time at influential Richmond bar Der Raum in the early 2000s introduced classic cocktails to Melbourne and, by extension, the rest of the country. In short, Aron is the perfect guest for the first Yes, Chef! of 2025.

He joins Yes, Chef! host Max Veenhuyzen on Monday 24 March for a far-reaching chat covering his journey from pubs in Victoria’s western region to Western Australia and some of the key lessons he’s learned en route.

Doors open from 5pm. The talk starts at 6.15pm and will run for approximately an hour plus audience Q&A. Afterwards, everyone is invited upstairs to Luis' to continue the conversation and connection. Drop concierge a note to reserve your table here.
